Updates Appraisal to 2.1.0
Changes the behavior of the default rake task to run all Appraisals when run locally
Ignores Appraisal generated Gemfile.lock files

Prior to this, developers have had to manually run appraisal commands as part of their PR process. Now it is handled by Travis.
