Update conformance test infrastructure to more current docker images #633

Previously the conformance test infrastructure didn't work on MacOS with Mx (ARM) processors due to some old docker images being used.

With this PR we upgraded the docker images to their latest stable versions and ensured that the testing environment can be executed on MacOS with ARM.
