Wipe the dirs in `assets` that can be generated by `lokoctl`

Wipe the dirs in `assets` that can be generated by `lokoctl` #1250

Wipe the following directories so that there are no conflicts:

assets/cluster-assets/
assets/terraform-modules/

Every time user run lokoctl cluster apply these files can be deleted from disk and new ones can be written to disk.

This also ensures that we don't have to specify commands like these in release notes:

Note that this will remove kubeconfig file for the cluster.
