I agree, the UI now looks a little bit different. However, the informations are still the same. Because the database is running inside the docker network (nextcloudnet) you can just use the container name as your database host.
So you can just enter "nextcloud_db" as you database host and the docker network will know to which container you would like to connect.
Closing due to inactivity
On the NextCloud setup page - there is now a field for Database Host - which isn't shown in your original installation instructions. What should go in here - I've currently tried localhost - 127.0.0.1 - 192.xx.xx.xx etc with various port numbers too.
Help?
