I know this is an older one, but I'm seeing the same thing on my laptop too, for what it's worth - Mint 21, Cinnamon 5.4.11, Linux Kernel 5.15.0-47-generic

but disconnecting the adapter not always solves it.. reboot solves it always
Having the same issue. Turning Wi-Fi off and back on again has fixed it every time for me recently. Came to this discussion because it happened twice already today, which was not happening before. It interrupts my connection. Running Mint 21.3 Virginia, Kernel 5.15.0-112-generic. My network device is an Intel Wi-Fi 6 AX200 using the iwlwifi driver.
Edit: The bug kept happening, so I tried the solution proposed at this link. Changing wifi.powersave = 3 to wifi.powersave = 2 then saving the file and rebooting has partially fixed the bug. The wifi strength for my access point still changes to 0% after some amount of time, but my connection is no longer interrupted (I'm updating this comment while it says 0%). I'll update here if I experience random internet loss again.
Edit 2: Appears to have been fixed by Linux Mint 22 Wilma. Wifi strength percent has been showing correctly ever since I upgraded.

Issue Problem with Wifi signal indicator in Network Manager Applet.
Steps to reproduce Auto-connect to any wifi network on boot up, leave it there for a moment then it will reset to 0%. Reconnect or turn off the adapter and back on will fix the problem.
Expected behaviour Always display the correct value.
