The primary GitHub font is Segoe UI, I believe. And Microsoft is grumpy that they don't allow using it on websites for free. It is technically possible to add it, but who knows if they'll find us (you, precisely 😁) and make a lawsuit for $99999999999: https://graphicdesign.stackexchange.com/questions/3184/segoe-ui-font-licensing#10989
Speaking of Noto Sans vs. Inter, do you really think it's worth the changing? Because from my n00b position they look almost identical to each other, so you were most likely thinking of Segoe UI.

this is what the silverware games site uses:
"Roboto", "proxima-nova", "helvetica neue", helvetica, arial, sans-serif,
but I checked in the inspector and github is using BlinkMacSystemFont
on my machine and I like that one.
I don't like Noto or Inter and yes they are extremely similar.
Either use Roboto or proxima-nova assuming the license for either one is acceptable.

is not a font per se, but rather a some fancy font-related thing created by Apple. You know, these guys are crazy when it comes to design: https://stackoverflow.com/a/32660790
So let's use Roboto then, as Proxima Nova seems to be owned by Adobe, and they won't even let me copy a link for it without signing up (and, possibly, asking for money $$$).
