docs: mention capabilities table and on_attach function configuration #655

First of all, thank you for this plugin!

While switching between LSPs I noticed that I lacked some functionalities on jdtls, which is funny because I had been using it for quite some time 😅.

Looking at the issues, and discussions I think this addition would help various users on their setups.

Let me know if I should change something.
