Get things ready for 1.01 release #334

Updated MAUI/iOS/Android dependencies to all be net7 (net6 is not supported for these) Updated version numbers to 1.0.1

Per the discussion in https://github.com/microcharts-dotnet/Microcharts/pull/328#issuecomment-1664426260, I'm getting things ready to do a 1.0.1 release.

@eman1986 it looks like I don't have sufficient permission to merge this on my own. Can you please approve/merge, or consider giving me enough access to do it myself? Thanks!

@Eilon I'll see what I need to do to get you that ability.

it appears I added a branch rule that only allows myself to bypass things, I'll work on relaxing that restriction.
