Add time_in_minutes and difficulty_level #192

This was causing the git resync to throw an error Missing fields in ./plugins/microsoft-entra-contractor-expiry-reminders/README.md: {'time_in_minutes', 'difficulty_level'} and further validation of files stops here.

This causes some invalid files to creep in to the PR and then throws validation error during PR checks.
