After to activate the plugin in Pressbooks (installation just in one site), I do activate the educational metadata in the book level. I did not write information in book info, I just write the educational information at book info

That is a problem of PressBooks, but we need to write some where about the need of to write those fields for a perfect utilization of the metadata on a PB installation. As we are integrating and extending our metadata with the metadata of PB.
