Do these events have alarm/reminders set? If your client, e.g. Thunderbird. marks the alarm as dismissed, the event is modified.

That's possible, but I'm not 100% sure. Is there a way to log the exact event modification that is happening?
That is not possible in Nextcloud right now. You could try to locate the event in the database (somewhere in oc_calendarobjects) and find the previous version from a database snapshot.

Bug description
I'm currently running NC 26.0.2 via nextcloud-aio with Calendar 4.4.1 and Notifications 2.14.0.
On this instance I have the 2 accounts - mine & my wife's (there's also a separate admin account).
I created a calendar and shared it with my wife. I connected my account to Android and MacOS. My wife only connects to Android. We both have enabled email notifications about calendar (all boxes related to calendar checked in the notifications settings)
Here's the problem: my wife randomly receives email notifications, every day or two with _Husband updated event AN_EVENT in calendar SHAREDCALENDAR. The problem is that I never update those events, and the notification doesn't show what exactly has been updated, so it's really hard to pinpoint what's going wrong.
This has been happening ever since I enabled the email notifications for her, spanning through several updates since then
