Would it be possible to have the timer continually repeat and continually trigger the sensor until the delay switch is turned off?

you can achieve this by creating an automation that when the sensor is triggered the delay switch will turn on again and the timer should restart. if you manually turn off the delay switch the sensor will not be triggered
