Add very basic Nix Flake #23

This is only to provide a small nixpkgs overlay and also make it easier to run the tests with just nix flake check.

Thanks! Why the removeAttrs bits?

This is to remove the builds that are not relevant from the checks attribute since they're neither tests nor derivations.
