Use 'latest' images instead of specific versions. #42

Both the linux and macos images currently being used have been deprecated. Using 'latest' should future-proof CI a bit.

2 checks are still failing though I've removed them from the actions workflow in this commit. I can't access the settings for this repo to check / change the branch protection rules ... any chance I can get an assist?
