improve default flags #243

there are 2 flags which IMHO should be improved.

the first is cdparanoia, which has seen great improvements in caching in
the latest release. so the default -Z flag should be romved

the 2nd is flac, which lacks the -V tag, which is essential on later
processing; the user won't be able to check his/her files for errors, on a
partial disk failure, for example (i also had such cases)
