feat: prepare for Pest 2.x #17

This is just updating dependencies in case we work on this for 2.x 👍🏻

One thing that we'd need to do is add a new 2.x / 1.x branch like we've done for our other repos. I think that it might be worth aliasing dev-master to 1.x as well in case anyone is using it.

@owenvoke Can you apply what I've done on the other plugins? Creating a branch for 1.x and another for 2.x?

Done. You can merge once this is ready. Be sure to apply all the changes we've done on the 2.x plugin repositories.
