There's no documentation on this so forgive me if I'm missing something obvious, but I'd like the option to install older macOS versions (pre-catalina). Is there such an option and if not, can one be added?

Original macos virtualization repository docs allows you to use another versions see here. They said:

The default installation uses Catalina, but you can choose which version to get by adding either --high-sierra, --mojave, or --catalina.

And I know they provide bigsur either, but it can be instable!

I actually need an older, not newer version. Whatever new stupid restrictions Apple has for app signing that I can't meet means nothing I write is actually runnable.
