maybe we need at least 720p resolution ?

BTW, the "auto" setting seems to stick on 480p.

Does your video have strange dimensions? It's impossible to transcode to a target with an odd value for a dimension (which is likely the reason why 720p was excluded)

on those 4K vidéos coming from a GoPro, 720p is proposed

some of them are lower resolution with 60fps, and don't have 720p proposed.

2704x1520 are weird dimensions. 720p horizontal would produce a fractional vertical pixel count (impossible).
