Add 3 additional related projects. Fix minor typo. #19

This contribution adds 3 more items to "related projects". ros2_latency_evaluation added for completeness (and to keep a complete inventory) but feel free to remove if undesired.

We decided to create the documentation using Sphinx, this should solve the problems I mentioned in https://github.com/ros-realtime/community/pull/19#discussion_r598873712
