fix: lock the metrics reporter dependency version in package.swift

Description

• In the iOS V1 SDK's Package.swift file, the MetricsReporter SDK dependency version is locked to v1.2.1.
• In previous versions, SPM would automatically update to the latest version. This change is necessary to lock the MetricsReporter SDK to a specific version.
