After a bit of discussion with @onewheelskyward, seems like we may want to:

create new server (using AWS ubuntu-latest-LTS image)
deploy / test our code
migrate DNS to point to it.

This will be a good way to also update docker to address @ionous 's aside-point in https://github.com/shift-org/shift-docs/issues/706

our production OS is getting a bit long in the tooth but is still updating for today so this is a post-PP task

I think we should plan to do this soon. But I definitely want you as a sidekick for this action, @onewheelskyward ! I also think it might be helpful to put aside a longer-than-2-hours-at-the-bar time window to do it so I can see how you create AWS instances and try to document the process to some degree while we rock..
