implement log levels
- The level DEBUG give files datails, and metadata
refactor the loggin system
- the log file can be of the type JSON, while the screen log remains readable
- the log screen is now coloured
Updated documentation for Immich-go environment variables.

These changes aim to make the codebase more maintainable and the command-line interface more user-friendly.
