Upgraded snap to 6.8 #3

@popey - i tried writing gradle version only once into snapcraft.yml file (at pull step) and then set the snap version using snapcraftctl set-version "6.7.1" but I couldn't make it use that version at build step. Any ideas on this one? (for now I just upgraded version numbers as is) I can also ask via the forums but check with you first :slightly_smiling_face:

Updated the PR to upgrade to 6.8 instead of 6.7.1 -- I hope that we'll merge this before the next release comes out. 🤞🏻
