Docker logging rotation issue

docker logs do not rotate by default and become huge in size SMIB logs to a file anyway - so docker logs are not being used properly anyway.

need to either:

• Turn off the docker logs
• delete them after a certain size (200mb?)
• Use docker logs to log to a file instead - although we cant do a daily rotate easily using this
