Update documentation for RMIT server version #4

Update all documentation from 2018 version to reflect the additions and modifications, including the protocol and eismassim, as now items are back in shops!

OK I have checked and seems @ayoung012 has updated the doc on eismassim for items:

He has also updated the description of shops in the scenario doc:

image

So now shops are useful to trade items, buy upgrades, and buy items.

This all seems to have been documented, right @ayoung012 ? great!
