Cannot define custom scc in OLM packages #353

Description

For Stackable operators to run on OpenShift, a custom SCC is needed. This SCC allows product Pods to mount ephemeral volumes (i.e. volumes created by the secret operator).

Unfortunately OpenShift OLM doesn't permit the deployment of custom SCC as discussed here: https://github.com/operator-framework/operator-lifecycle-manager/issues/2847

Closing this for now as we are moving away from custom sccs.
