Averted on Mad Men. Although multiple child actors are used to portray the growing children in the cast, they don't grow any faster than the timeline dictates. (The show tends to jump forward about a year between seasons.) Meanwhile, because the show runners want to hold onto Kiernan Shipka's outstanding acting talent, Sally Draper actually appears to age slower than the show's calendar would dictate.
