Configurable PVC for SurrealKV #12

There is a lack of support and documentation with deploying the Helm Chart with either a pre-configured PVC or have the helm chart create a PVC to be used with SurrealKV.

I'm adding support for customizing volumes and volume claims in #13. It should be enough to experiment with various backends with more practical setups!
