Upgrading simple-git #287

Upgrading the simple-git dependency to 3.16.0+. Resolves #278.

It looks like Node 16 doesn't like the changes, but the changes go in the right direction. Did node 16 work before?

It's a test timing out, a current roadbump that PRs have been hitting. Hoping that #283 from Jereon helps here.
