This PR renames the @tvkitchen/appliance-ccextractor package to @tvkitchen/appliance-video-caption-extractor
Once we release this update we'll want to mark the ccextractor-appliance package as depricated on npm, since future caption appliance updates will be made to this package.
We will also want to eventually update our website documentation + cookbook entry for caption extraction to use the new name + version.
