Add documentation and example for k8s #7

This PR adds documentation and an example of how to deploy the plugin on Kubernetes.

It also fixes an issue with the plugin socket directory adding a directory per plugin in the /var/run/scope/plugins directory. It ensures that the /var/run/scope/plugins directory is created in case it does not exist because there is no guarantee that scope will start before the plugin.
