Fork and Update `cypress-jest-adapter`'s Dependencies #5002

My concern with using this helper package (cypress-jest-adapter) is that it may not be actively maintained

So if we plan to use it, we may need to maintain it ourselves. Even the dependencies haven't been upgraded in over a year:
