Annotate required tests with `QuarkusTest` annotations

Some tests might require QuarkusTest to work, but this will require some adaptions to the pom to be able to run the build:

• [ ] jacoco report will require quarkus
• [ ] Maybe some tests for the cli-tools would need the QuarkusIntegrationTest annotation
• [ ] Maybe use some Alternative annotation to use our mock-server/services
• [ ] Use injection to also be sure that we have the beans available (note that #127 might require QuarkustTest to be functional).
