Add ability to customize proxy's docker images #1359

Current Docker images versions are hard coded and current nginx version is outdated with potential security issues.
This PR adds the possibility to the user to choose a custom image to run the proxy.

@dorianboulch thanks for this PR. I'm keen to try your fork on my project. First though, would you be willing to pull the recent changes from zodern:master into your fork?

@zodern this PR is small, doesn't change current behavior, and allows full flexibility, can we merge this and release a new version?
