Fix ANONYMOUS_ROLE handling and add advanced logging feature

First of all: I made quite a lot of changes, which seemed logical to me. If you like, we can still discuss or adapt the structure and features at all.

Fixed ` handling:

• It was not possible to not set a ANONYMOUS_ROLE
• The handling of missing roles in Hausra results in a constraint-violation response for unauthorized requests which is confusing in my eyes. Therefore I tried to upate the hasura config docs accordingly.

New feature logging:

• Currently, request header and tokenParsed are logged to the console if debugMode is set to true.
• I think it would be helpful to log to a file besides the log to the console.
• Additionaly, I would like to also log the requests in an advanced way.
