[squid-api#586] update @axelar-network/axelarjs-sdk to 0.16.1 #62

Description of changes

-squid-api, squid-data-service and squid-pathfinder are all depending on squid-types

update @axelar-network/axelarjs-sdk to ^0.16.1 that is compatible with node 18 and node 20
eventually, we will have another PR to update the build of this repo to build with node 20 as well, but we can build this with node 18 for now.
