Increase default logging verbosity of mongo servers #254

Increasing the logging verbosity would make it easier to debug server failures.

@xdg, do you think a single -v, https://docs.mongodb.com/manual/reference/program/mongod/#cmdoption-mongod-verbose, is good enough?

I think one -v is a good compromise.
