Description of the Change

Removes the develop-v1 branch from various workflow files now that we have released version 2.0.0

Closes #953

How to test the Change

Check that the various actions on this PR run as expected.
Post merge ensure that the various actions continue to run on develop as expected.
During the next release ensure the various actions continue to run on trunk as expected.

Changelog Entry

Removed - GitHub actions for version 1.x releases.
