For versions like 1.19.2, 1.19.1, and anything 1.19 should I just use 1.18.2? I assume so, but I'm not 100% sure.

For 1.19 just use the 1.19 release. However make sure to check readme.md to see what seed cracking methods are not supported, and will result in invalid data.
