Gradle and Loom upgrades #238

Update Gradle version to 8.1.1 and Fabric Loom version to 1.2.7. Update build.gradle and settings.gradle to work with the new version. Set proper com.seedfinding versions (https://mvnrepository.com/artifact/com.seedfinding).
