Update `emissions_profile*` and `sector_profile*` toy datasets

This PR updates the emissions_profile* and sector_profile* toy datasets after reverting the shuffle of activity_uuid_product_uuid and jittering only the unique co2_footprint values. You can see the change in this PR.

@maurolepore Failing checks will disappear after snapshots in tiltIndicator and tiltIndicatorAfter package will be updated based on these new toy datasets. Therefore, I will first merge this PR and then change the snapshots in other packages.
