We were running out of space while building the image otherwise

I opened https://github.com/2i2c-org/utoronto-image/runs/4941592649?check_suite_focus=true to test how much disk space we had before this PR - looks like we had 32G free, and now we have like 53G free.

I also made one addition to the Dockerfile that should reduce our docker image size a little.
