[x] build: Enable build with recursion-schemes 5.2
- Own PR proposal due to the old PR by @hasufell being stalled and upstream not being responsive
[x] Limit recursion-schemes version to < 5.2.0 due to cardano-binary-1.5.0 requires recursion-schemes ==5.1.*
- May not be needed, working with upstream, currently custom patch
