fix: certificate renewal

Description

Fix the renewal of the certificates on the VPS.

Fixes

• docs.nantral-platform.fr should not be handled by us.
• We should use the prod.yml file when reloading Nginx.

TODO:

• [x] Adjust the crontab for the new location of the script.
• [ ] Make sure that the script does not output to /etc/letsencrypt/nantral-platform.fr
