Now that main branch is 1.7.x, we should use 1.6.x branch for feeding the docs until we have versioning set up.

The release action builds binaries for all supported Terraform/OpenTofu platforms, but the only resources currently exposed require `vesctl` which is published in mac and linux amd64 flavours.
