Replaced usage of nonexistent `access-om3-virtual` package with `access-om3` #6

This was due to the changes in this PR https://github.com/ACCESS-NRI/spack-packages/pull/94 which removed the access-om3-virtual package as the root SBD.

@harshula it can, but I think this CI/CD infrastructure will be superseded very soon
