Create a new major release, please.

Background:

There have been 200 commits since ~v1.0.0~
We want to sync content from this repo into https://github.com/thoth-station/helm-charts/ and we will use specific tags as a reference

cc @harshad16 @Gregory-Pereira as we discussed in yesterday's SP-pipelines sync
