This would be useful for combat situations by showing the amount of percentage of fly blocks remaining before sinking. It would also be cool if it was color coded being green from 80-100%, yellow from 79-60% and red from 59-0%.

I think you're looking for a status: sign. Just write status: on the first line of the sign and you'll have what you want there.
