Why use 8 dynamic queries to load sex, race, ethnicity? #9

We (@njgraham, @mprittie and I) are having trouble working with the code in PCORNetDemographic. Would you please help us understand why there are 8 different queries? and why they are built with dynamic SQL?

It is too deep a mystery for me as well. Aaron abend wrote that code so we should loop him in. I don't know his github id, maybe you can find it?
