Made a separate docs folder so that detailed info can be abstracted away from the main readme
Currently all info in readme has been moved to the developer sections, there's also an empty user guide that will make a nice STP project to complete in future
Will need to deploy on github pages, I think its already set up but we wont know if its working until merged to main
